Potato Apple Soup
This delicately flavored potato soup may be served hot or cold.

1 cup onions, chopped
1/4 cup celery, sliced
1 pound potatoes, peeled and cut into 1/2-inch slices
1 tart apple, finely chopped
1/4 cup fresh dill, finely chopped
1 cup light cream
freshly ground pepper

Combine the onions and celery in a large casserole. Cover and microwave on High (100 percent) for 4 to 5 minutes or until the onion is soft.

Add the potatoes and broth and microwave, covered, on High (100 percent) for 14 to 15 minutes or until the potatoes are tender, stirring once. Add the chopped apple and let the mixture stand, covered, for 5 minutes.

Puree the mixture in a blender or food processor until smooth. Stir in the dill and cream and season with salt and pepper to taste.

Microwave for 2 to 3 minutes on High (100 percent). Serve the soup immediately or serve it chilled.
