Ham Salad Sandwich
One of the joys of baking a ham is the leftovers that make delicious sandwiches.

1 pound baked ham, cut into 1/8-inch strips
6 sweet pickles, chopped
1 stalk celery, thinly sliced
1/4 cup fresh chopped dill
1/4 cup chives, chopped
1/4 cup mayonnaise
2 tablespoons Dijon mustard
1/8 teaspoon cayenne pepper
8 slices rye toast
2 hard-cooked eggs, sliced, optional




Combine the ham, pickles, celery, dill, chives, mayonnaise, mustard and cayenne in a large bowl.

Spread the ham mixture over four of the rye toast slices. Top with egg slices, if desired, and then with the remaining slices of toast.
