Spicy Grilled Ginger Chicken Wings

4 pounds chicken wings
1 cup ketchup
6 tablespoons low sodium soy sauce
1/4 cup sesame oil
1/4 cup sherry
2 tablespoons brown sugar
2 tablespoons chopped fresh ginger
2 cloves garlic, chopped
1 jalapeno, chopped

Remove the smallest section of each wing at the joint and discard.

In a glass, ceramic, or other non-reactive bowl, whisk together the ketchup, soy sauce, sesame oil, sherry, brown sugar, ginger, garlic, and jalapno. Remove about a cup and set aside for basting.

Spread the chicken wings in a shallow glass dish or put them in a re-sealable plastic bag. Pour the remaining marinade over them, turn to coat, and refrigerate for at least 40 minutes and up to 4 hours.

Prepare a gas or charcoal grill so that the heating elements or coals are medium-hot. Arrange the coals for indirect grilling. If using a gas grill, do not ignite the heating element on one side of the grill.

Remove the wings from the marinade and begin by grilling them over the hottest part of the grill. After 7 to 8 minutes and using tongs, move them to the cooler side of the grill and grill for 10 to 12 minutes longer or until the skin is crisp and lacquered and the meat is tender. Brush often with the reserved marinade.

Note: If you want a dipping sauce, double the amount of sauce and reserve the extra to serve at the table. Put the extra in a saucepan and heat gently before serving. Do not use the marinade that the chicken has soaked in or that you have brushed on the chicken as it grilled.
