Arizona Chicken

2 medium-size cloves garlic, finely chopped
1/4 cup orange juice or cider vinegar
1 tablespoon vegetable oil
2 tablespoons chili powder or mild paprika
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon cinnamon
1/2 teaspoon hot red pepper flakes
1/2 teaspoon ground coriander, (optional)
1/2 teaspoon salt
2 tablespoons water
4 pounds chicken parts
Lime wedges




Heat the oven to 375 degrees.

Put all the ingredients except the chicken and lime in the bowl of a food processor and process to a smooth paste.

Put the chicken in a large baking dish or small roasting pan. Spread the spice paste over the chicken and bake for 40 to 45 minutes until the chicken is cooked through. Serve with lime wedges.
