Oven-Deviled Chicken with Yogurt

1/2 cup plain lowfat yogurt
3 tablespoons Dijon mustard
3/4 teaspoon Tabasco sauce
1/2 teaspoon salt
3 to 3 1/2 pounds chicken parts, cut into pieces, rinsed and patted dry
2 1/2 cups bread crumbs
1/4 teaspoon cayenne pepper
2 tablespoons olive oil




Line a 9-by-13-inch baking dish with heavy-duty aluminum foil. Spray the dish lightly with non-stick vegetable oil spray. Heat the oven to 400 degrees.

In a large bowl, stir together the yogurt, mustard, Tabasco and salt. Add the chicken and stir until the chicken is well coated.

In a medium bowl, combine the bread crumbs and cayenne pepper. Roll each piece of chicken in the bread crumbs. Put the chicken in the prepared pan and drizzle with the olive oil. Bake for 50 minutes to 1 hour until golden brown and the juices run clear when the chicken is pierced. Serve hot, warm or at room temperature.
