Pesto Beef Sandwich-In-The-Round

1 loaf crusty round bread, about 12 inches in diameter
1/3 cup light mayonnaise
3 tablespoons pesto sauce, prepared
1 teaspoon fresh lemon juice
1 1/4 pounds roast beef, thinly sliced
1 jar (7 ounces) roasted red peppers, drained well
3 cups (3 ounces) mixed greens
1/2 cup (3 ounces) feta cheese, crumbled

Cut the loaf of bread horizontally in half and pull out the center, leaving 1-inch-thick shell.
(Use the center of the loaf for another use, such as bread crumbs.)

In a small bowl, combine the mayonnaise, pesto sauce, and lemon juice. Spread on the cut surfaces of both halves.

Layer roast beef, roasted peppers, greens, and cheese on bottom half. Season with pepper, if desired, and then close with top half of the loaf.

Cut the giant sandwich into 6 wedges and serve immediately.
