Cherry Cashew Cookies
These chewy cookies are great anytime. They are great to tuck into lunchboxes or with a big glass of milk after school.

1 cup butter, or margarine
3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
2 eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 package (10 ounces) vanilla milk chips, or 1 2/3 cups coarsely chopped white chocolate
1 1/2 cups dried cherries
1 cup coarsley chopped cashews, lightly salted




Preheat oven to 375 degrees.

In a large mixing bowl, combine the butter, granulated sugar, brown sugar, eggs, and vanilla. Mix with an electric mixer on medium speed until thoroughly mixed.

Combine the flour and baking soda; gradually add flour mixture to the batter. Stir in the chips or chopped white chocolate, dried cherries, and cashews.

Drop by rounded tablespoonfuls onto ungreased baking sheets.

Bake for 12 to 15 minutes, or until golden brown. Let the cookies sit on the baking sheets for 3 to 4 minutes and then transfer to wire racks to cool completely. Store in a tightly covered container.
