Grilled Fennel
When grilled, anise-flavored fennel caramelizes deliciously, while keeping its crisp-tender texture. If you have white truffle oil, a drizzle turns this crunchy side dish into a decadent one!

2 bulbs fennel, fronds removed, sliced into 1/3-inch thick slices
2 tablespoons olive oil
Salt and freshly ground pepper, to taste
1 tablespoon white truffle oil, or more to taste, optional





Heat a charcoal or gas grill so that the coals or heating elements are medium-hot.

Brush the fennel with olive oil, season with salt and pepper and grill for about 4 minutes on each side, or until slightly charred and softened.

Put the fennel on a platter and drizzle with the truffle oil, if using. Season with more salt and pepper, if needed. Serve warm or at room temperature.
