Spiced Sweet Potatoes
Sweet potato lovers adore this yummy side dish. We especially like these warm, rich flavors in the fall and winter.

4 tablespoons apricot preserves
2 teaspoons lemon juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
4 large sweet potatoes, peeled and cut lengthwise into eight wedges




Heat the oven to 400°F.


In a heavy saucepan, combine the preserves with about 1/2 cup of water and bring to a boil over medium-high heat. Reduce the heat and simmer for about 5 minutes, stirring constantly, until smooth and hot. Remove from the heat and stir in lemon juice, salt, nutmeg and cinnamon.


Arrange the sweet potatoes in a baking pan. Using a pastry brush, baste potatoes with the sauce, using about half of it. Bake for about 40 minutes, or until the potatoes are tender. About halfway through cooking, baste the potatoes with the remaining sauce. Serve hot.


Note: If you prefer, don't use all the glaze. The potatoes won't be quite as sweet.
