2-1/2 Cups all-purpose flour
2 Cups sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1-1/2 Cups cooking oil
4 eggs, slightly beaten
3 4 oz jars strained carrots [baby food]
1 cup chopped nuts [or I prefer nuts & raisins]
1/2 cup butter, softened
1 3 oz. package cream cheese, softened
1 teasppon vanilla
3 Cups sifted powdered sugar

1. Grease a 15x10x1-inch baking pan; set aside. 2. Combine flour, sugar, cinnamon, baking powder, baking soda, & salt. Add oil, eggs & carrots. Beat with an electric mixer until combined. Sit in nuts. Pour into prepared pan. Bake in a 35c-degree F. oven for 30 minutes. Cool in pan on wire rack. 3. Meanwhile, for frosting, beat butter, cream cheese, & vanilla till light & fluffy. Gradually add 2 cups powdered sugar, beating well. Beat in remaining powdered sugar. Frost bars. Store bars, covered in refrigerator.
