Black Bottom Cupcakes
Rich chocolate cupcakes with a sublime filling made from cream cheese and mini chocolate chips are enough to make anyone swoon with joy!

8 ounce package cream cheese, softened
1 large egg
Salt
1 C. miniature chocolate chips
1 1/2 C. flour
1 C. sugar
1/2 C. cocoa
1 tsp. baking soda
1 tsp. vanilla
1 tbsp. vinegar
1/3 C. oil
1 C. water




Beat together the softened cream cheese, egg and about 1/8 teaspoon of salt until smooth. Add the chocolate chips and stir until well mixed.

Whisk together the flour, sugar, cocoa, baking soda, and 1/2 teaspoon of salt in a mixing bowl. Make a well in center of dry ingredients and add vanilla, vinegar, oil and water. Mix until smooth.

Put paper liners in each of 24 cupcake (muffin) cups. Fill each 2/3 full with batter. Drop an even teaspoonful of filling into center of each cupcake. It will not sink into the batter but should submerge. Help it along with the back of a spoon, if necessary.

Bake for 20 to 25 minutes. Let the cupcakes cool in the pan for a few minutes before removing from the pan and cooling on wire racks.

These cupcakes do not need frosting, although it's your decision.
