Mishka's cactus chili
cactus simmered in enchilada sauce with beans and or meat

1 jar DONA MARIA cactus rinsed and well
1 can red enchilada sauce (I use mild)
1 cans kidney beans drained and rinsed well or If you want meat in this 1 lb. of either lean ground beef or turkey browned and drained




Using a crock pot or large pan add enchilada sauce put on low heat while preparing the rest of the ingredients. Pour cactus into a colander(strainer) and rinse well remove the onions and cilantro and cut cactus into smaller pieces if you would like. Add to the enchilada sauce. Rinse and drain red kidney beans add to enchilada sauce and cactus. If you want meat in this brown the ground beef or turkey drain well and add to the pot. Allow to simmer at least 1/2 hour on stove on medium or leave in crock pot on medium setting of crock pot as long as you would like.

Notes:
I usually serve this with rice and flour tortillas or corn bread. My son prefers this without the meat.
