Chicken Gizzards over Yellow Rice

1 lb. chicken gizzards simmered in 2 qts water-salted
3 stalks celery diced
3 carrots diced
1 small/medium onion diced
2 cloves garlic minced
1 tsp salt
1/4 tsp pepper
1/3 cup Sherry or port wine
Carolina brand or Mahatma Brand yellow rice (prepared according to directions)




Begin by rinsing gizzards and placing in large pot. Add two quarts of water and about 1 tbl salt. Place on med high til boiling. then reduce heat and simmer about 1 hour. Replace water as needed. Meanwhile, dice celery, carrots and onion. Mince garlic cloves and sautee all in 1/8 cup vegetable oil. Add salt and pepper. While the vegetables are getting soft, add the port wine or sherry. Begin the process of preparing the rice. Turn the heat off the vegetable mixture, let rest. Drain the gizzards and rinse to cool. Dice gizzards and add to vegetables. Heat through and serve over yellow rice. Serves 4 to 6 as an appetizer. Enjoy!

Notes:
Most of the prep time involves waiting for the gizzards and hearts to get soft while simmering. Vegetables can be diced while waiting for the gizzards.
