Shipwreck Stew
I love to cook up a big batch of this in the slow cooker during the cold months. It freezes perfectly & makes a great last minute dinner idea served up w/a salad & crusty bread!

2 lbs ground beef
2 (10.75 oz) cans condensed tomato soup
2 medium onions, chopped
5 large potatoes, cubed
1 pack mushrooms, sliced
2 (15.25 oz) cans kidney beans, undrained




Crumble the ground beef in a large skillet over medium-high heat. Cook and stir until browned. Drain grease and transfer beef to a slow cooker. Mix in the tomato soups (undiluted), onions, potatoes, mushrooms and beans.
Cover and cook on the low setting for 4 to 5 hours, until stew is thick and potatoes are tender.
