Tomato Pie
Delicious way to use fresh tomatoes. A perfect summer dinner, served with salad and fresh rolls.

1 Unbaked deep-dish pie shell
1/2 teaspoon dried dill
3 medium tomatoes, sliced
3/4 cup mayonnaise
1 cup Cheddar cheese, Grated
1 4 oz-can mushrooms, sliced
1 Teaspoon scallions, chopped
1 Teaspoon green peppers, chopped




Preheat oven to 350F. Sprinkle unbaked pie shell with dill and bake 15 minutes or until light brown. As pie shell cools combine, mayonnaise, Cheddar cheese, mushrooms, scallions and mushrooms. Place half of the sliced tomatoes on the baked pie shell. Cover with half of the cheese mixture. Layer the rest of the tomatoes on the pie and finish with the remaining cheese mixture. Bake for 35 minutes.
