Tomato and Bacon Quesadillas
A perfect appetizer or snack, cheesy quesadillas with bacon, tomato and fresh basil.

8-in. flour tortillas
2 cups Mexican-style cheese blend, shredded
1 14 1/2-OZ. can diced tomatoes
8 slices bacon, cooked crumbled
1/2 cup fresh basil, loosely packed chopped optional
2 tablespoons Vegetable Oil
sour cream, optional




Layer over half of each tortilla: 1/4 cup cheese, 2 tablespoons tomatoes, 1 tablespoon bacon, and 1 tablespoon basil. Fold each tortilla over to form a half circle.

Coat a large nonstick skillet or griddle lightly with oil. Cook each quesadilla over medium-low heat, about 1 1/2 minutes on each side until cheese is melted and the tortilla is lightly browned

Cut each quesadilla into 4 wedges. Serve with sour cream, if desired.
