Rustic Tuscany Bread

1 pound frozen bread dough
cooking spray
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
1 14 1/2 oz can tomatoes, with basil, garlic & oregano diced drained
1/2 cup Cheddar cheese, shredded




Thaw bread dough according to package directions. Preheat oven to 400°F; spray baking sheet with cooking spray.

Roll dough out to a 12 x 10-inch rectangle on a lightly floured surface. Brush dough lightly with olive oil; sprinkle evenly with salt and pepper. Layer well-drained tomatoes and cheeses over dough. Fold dough in thirds over filling. With a sharp knife, cut 3 diagonal slices approximately 2-inches apart on top of dough through first layer. Repeat with second set of cuts in opposite direction, criss-crossing first cuts, forming a diamond pattern.

Place loaf on prepared baking sheet. Bake for 25 minutes or until golden brown.
