20 med.lg. tomatoes
4-6 green peppers
2 bunches green onions
10-12 cloves garlic, (or 6 tsp. minced from jar)
4 tsp. salt
4 tsp. oregano
4 tsp. fresh cilantro, (or more)
6 (or more) jalapeno peppers

Bring large dutch oven 1/2 full of water to boil, turn down to medium heat. Place approx. 6 tomatoes in water for 30 seconds, remove and place in large bowl. Do this with all the tomatoes. Remove skins, chop each into approx. 8 pieces and place in food processor until desired texture. Green peppers & jalepenos can be done the same as well. I suggest chopping the onions in a high quality food chopper or by hand, they come out better. The garlic can also be done in chopper or by hand (or you can use the moist minced garlic purchased in a jar). Chop the cilantro leaves in the chopper as well. Place all of the above ingredients in a large pot. Add salt, oregano and vinegar. Simmer for approximately 1 hour (to desired consistency). I sometimes add a large can of tomato sauce or paste. I cool it down, place it in 2-3 cup containers and freeze for future use. My family loves this salsa!
