Ice Cream Lollipops
Kids love making these just for fun or for a special celebration or birthday party!

1/2 pint chocolate ice cream
1/2 pint vanilla ice cream
1/2 pint strawberry ice cream
1 20-ounce bag semi-sweet chocolate morsels
1 1/2 tablespoons tasteless vegetable oil, such as canola
Toppings: (Choose your favorites)
1 1/2 to 2 cups chopped peanuts
1 1/2 to 2 cups chopped chocolate candy bars
1 1/2 to 2 cups shredded coconut
1 1/2 to 2 cups chopped caramels
1 1/2 to 2 cups chopped marshmallows
1 1/2 to 2 cups gummy candies
1 1/2 to 2 cups sprinkles
1 1/2 to 2 cups choppped glazed cherries




Line a baking sheet or jelly roll pan with waxed paper. Make room in the freezer for the pan. Let the prepared pan chill in the freezer while you prepare the ice cream.

Let the half pints of ice cream soften slightly at room temperature. Using a 1 1/2-inch-round ice cream scoop, scoop 8 balls from each half pint of ice cream. Arrange the balls on the cold tray. You may have to return it to the freezer every so often if the ice cream starts to melt too much.

Insert a lollipop stick in each ball. Let the ice cream balls freeze overnight or for at least 8 hours.

In the top of a double boiler set over barely simmering water, melt the chocolate and oil, stirring until smooth. Remove from the heat and let the chocolate cool until barely lukewarm but still fluid.

Meanwhile, put the toppings of choice in shallow bowls or on plates. Arrange them in a line on the countertop or work surface.

Working quickly but without rushing, dip each ice cream ball in the melted chocolate to cover partially. Next, dip it in your chosen topping. Use one or two toppings for each ball.

Replace the ice cream lollipops on the lined baking sheet and return to the freezer for at least 2 hours and up to 2 to 3 days.

You may want to have more than one lined baking sheet on hand so that you can freeze half the lollipops while working on the others.

Serve the ice cream lollipops frozen from the freezer.
Lollipop sticks are available in craft stores, gourmet shops, and some supermarkets. Substitute sturdy straws or ice pop sticks.
