Lo Carb Italian Chicken & Pasta

6 boneless skinless chicken breasts
2 TB extra virgin olive oil
1-2 Tb crushed garlic
2 cans Italian seasoned diced tomatoes
1 can Mexican seasoned diced tomatoes, (with peppers)
1 Tsp dried oregano
1 Tsp dried basil
salt & pepper




In a large, deep skillet, brown chicken breasts in 1 Tb of the olive oil on med-hi. Meanwhile set salted water to boil for pasta.

Turn chicken down to lo and add tomatoes, garlic, and seasonings. Stir thoroughly. Cover and let simmer for 15-20 min.

Add remaining Tb of oil to boiling water and add pasta. Cook to desired texture.

Serve Chicken and tomatoes over pasta with a salad of dark greens. Salt and pepper to taste.


*You may choose any pasta you prefer. Recipe is very good with vegetable pasta. For lo carb choose whole wheat, hi protein or bean pasta and keep the servings to 1/2 c when serving.
