Curried cabbage
I serve this dish with jerk chicken or other savory chicken dishes. It has a great spicy flavor without being overpowering. I like to keep the cabbage slightly crisp.

1 small onion, finely chopped
1 medium cabbage, shredded
2 carrots, sliced into rounds
1 green bell pepper, chopped
1 large tomato, sliced
6 tablespoons oil
1/2 cup chicken stock, or water
1/2 teaspoon salt
1 tablespoon curry powder

1)Over moderate heat, saute the onion in oil until transluscent, stirring to prevent scorching.

2)Add tomatoes, salt, & curry powder & continue to stir for about 3 minutes.

3)Add cabbage, carrots, & pepper & mix well.

4)Pour in chicken stock or water.

5)Cover the pot, reduce heat, & simmer until the liquid is abosrbed. The cabbage should still be slightly crunchy.
