Pace® Street-Style Red Chile Enchiladas
Reminiscent of snacks sold by street vendors in Mexico, these filled-and-folded tortilla snacks feature the authentic flavors of roasted chile in Pace® Enchilada Sauce. Tortillas coated with sauce are sautéed and topped with more enchilada sauce, zucchini and grated aged cheese.

1 jar (17.5 oz.) Pace® Enchilada Sauce
1 cup zucchini, cut in 2" strips
1/4 cup vegetable oil
12 corn tortillas, (6")
crumbled queso anejo or grated parmesan cheese
Thinly shredded lettuce

POUR 1 1/2 cups enchilada sauce into shallow dish. Cook zucchini in a little oil in skillet until tender-crisp. Mix with remaining enchilada sauce.

DIP tortillas in enchilada sauce to coat.

HEAT 1 tbsp. oil in 12" nonstick skillet. Add 3 tortillas, overlapping as little as possible. Cook 1 min., turning once. Fold in half and place on one plate.* Repeat with remaining oil and tortillas.

SPRINKLE with cheese. Top with zucchini mixture and lettuce.

TIP: Other delicious toppers include: chopped cooked chorizo and shredded chicken or beef.
