Wild Mushroom Rice Pilaf

1 tbsp. olive oil
1 lb. assorted mushrooms, coarsely chopped*
2 medium shallots, finely chopped
2 cloves garlic, minced
1 tsp. dried thyme leaves, crushed
1/2 cup uncooked wild rice
2 cans (14 oz. each) Swanson® Beef Broth or 2 cans (14 oz. each) Swanson® Beef Broth
1 cup uncooked white rice
2 tbsp. chopped fresh parsley

HEAT oil in large nonstick skillet. Add mushrooms, shallots, garlic and thyme and cook until tender.

ADD wild rice and broth. Heat to a boil. Cover and cook over low heat 25 min. Add white rice. Cover and cook 20 min. or until done. Stir in parsley.

*Or use dried wild mushrooms instead of fresh mushrooms. Cover dried mushrooms with hot Swanson® Broth. Let stand 15 min. Pour off broth and reserve for another use. Chop mushrooms. Proceed as above.
