Spicy Almond Coconut Rice

(14 oz.) Swanson® Natural Goodness™ Chicken Broth, (1 3/4 cups) or 1 can (14 oz.) chicken broth, (1 3/4 cups)
1/2 cup unsweetened coconut milk
1 cup uncooked white rice
1 tsp. grated lemon rind
1/4 tsp. garlic powder
1/4 tsp. crushed red pepper
1/2 cup toasted slivered almonds
1/4 cup sliced green onions




HEAT broth and coconut milk in saucepan to a boil. Stir in rice, lemon rind, garlic and pepper. Cover and cook over low heat 20 min., stirring occasionally, or until done.

STIR in almonds and onions.
