Lentils and Rice
Cook up a new salad with this tasty combination of beans and rice simmered in Swanson® Broth and then tossed with vinaigrette.

1 can (14 oz.) Swanson® Natural Goodness™ Chicken Broth, (1 3/4 cups)
1/3 cup dry lentils
1/2 cup uncooked regular long grain white rice
1 stalk celery, sliced
1 medium red onion, chopped
1 small green or red pepper, diced
1/2 cup fat-free vinaigrette




HEAT broth in saucepan to a boil. Stir in lentils. Cover and cook over low heat 5 min. Stir in rice. Cover and cook over low heat 20 min. or until done. Let stand 5 min.

TOSS lentil mixture, celery, onion, green pepper and vinaigrette until evenly coated. Refrigerate at least 2 hr.
