1 lb. boneless beef stew meat, cut into 1" cubes
2 tbsp. all-purpose flour
2 tbsp. Vegetable Oil
3 large onions, chopped
12 small red potatoes, cut into quarters
2 medium carrots, sliced
4 cloves garlic, minced
1 tbsp. chopped fresh thyme or 1 tsp. dried thyme leaves, crushed
2 tbsp. tomato paste
1 1/2 tsp. instant coffee
1 box (32 oz.) beef broth

SEASON beef with pepper and coat with flour.

HEAT oil in skillet. Add beef and cook until browned.

PLACE onions, potatoes, carrots, garlic and thyme in 3 1/2-qt. slow cooker. Top with browned beef. Mix tomato paste, coffee and 1 cup broth. Pour coffee mixture and remaining broth into slow cooker. Cover and cook on LOW 8 to 10 hr.*

SERVE in bowls. Garnish with sour cream and chopped green onions, if desired.

*Or on HIGH 4 to 5 hr.
