Pace® Thai Chicken Fettuccine Salad

1 cup Pace® Picante Sauce
1/4 cup chunky peanut butter
2 tbsp. honey
2 tbsp. orange juice
1 tsp. soy sauce
1/2 tsp. ground ginger
3 cups fettuccine (about 6 ounces dry), cooked and drained
2 cups cubed cooked chickens
Mixed salad greens
Chopped red pepper
Chopped fresh cilantro leaves




In medium skillet mix picante sauce, peanut butter, honey, orange juice, soy and ginger. Over low heat, heat through, stirring constantly.

Add fettuccine and chicken. Toss mixture until evenly coated. Serve on salad greens. Garnish with chopped red pepper and cilantro.



For 2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound skinless, boneless chicken breasts or thighs, cubed, 5 minutes or until chicken is no longer pink.
