Pace® Fiesta Chicken and Rice

1 tbsp. Vegetable Oil
1 cup uncooked regular long grain white rice
1 can (10 1/2 ounces) condensed chicken broth
1 cup water
1/2 cup Pace® Picante Sauce
1 tsp. ground cumin
2 medium tomatoes, coarsely chopped (about 2 cups)
1 cup frozen peas
2 green onions, sliced (about 1/4 cup)
2 cups cubed cooked chickens




In medium skillet over medium heat, heat oil. Add rice and cook until browned, stirring constantly.

Stir in broth, water, picante sauce and cumin. Heat to a boil. Reduce heat to low. Cover and cook 15 minutes.

Stir in tomatoes, peas, onions and chicken. Cover and cook 5 minutes more or until rice is done and most of liquid is absorbed.



For 2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound skinless, boneless chicken breasts or thighs, cubed, 5 minutes or until chicken is no longer pink.
