Pace® Spicy Sausage and Bean Tostadas

1/4 lb. chorizo sausage, casing removed*
1/2 cup Pace® Picante Sauce
1 tsp. chili powder
1 can (about 16 ounces) pinto beans, drained
1 can (14 1/2 ounces) whole peeled tomatoes, drained and cut up
1 medium potato, cooked and cubed (about 1 cup)
Vegetable Oil
8 corn tortillas, (6-inch)
2 cups shredded lettuce
1 cup shredded Monterey Jack cheese, (4 ounces)





COOK sausage in saucepan until browned. Pour off fat.

ADD picante sauce, chili powder, beans, tomatoes and potato. Cook over low heat 10 min.

HEAT 1" oil in skillet. Add tortillas one at a time and cook until crisp. Drain.

TOP each tortilla with about 1/3 cup sausage mixture. Top with lettuce and cheese.

TIP: *Or use hot Italian pork sausage.
