Pace® Mexican Surprise Meatballs
Garlic-seasoned meatballs, flecked with green parsley, are formed around pimiento-stuffed olives. Conveniently baked instead of pan-fried, cooked meatballs are simmered in spicy tomato salsa for serving.

2 slices firm-textured bread, torn into small pieces
1/2 cup milk
2 lb. lean ground beef
2 eggs, slightly beaten
1 small onion, finely chopped
3 cloves garlic, minced
1/4 cup finely chopped fresh parsley
1/2 tsp. pepper
50 pimento-stuffed salad olives
2 jars (16 oz. each) Pace® Picante Sauce

SOAK bread in milk. Mix thoroughly beef, eggs, onion, garlic, parsley, bread mixture and pepper. Shape into 1" balls, placing an olive in center of each. Place in large baking pan.

BAKE at 350°F. for 25 min. or until done.

PLACE meatballs in saucepot. Add picante sauce and heat through. Serve with wooden picks. Makes 50 meatballs.
