Pressure Cooker Boston Baked Beans
Try this old standby for a filling and warm meal.

2 cups navy or kidney dried beans
1/4 cup Crisco® Oil
1 tablespoon salt
1/2 pound bacon, sliced
4 tablespoons brown sugar
2 tablespoons molasses
1 teaspoon spicy brown mustard
1 onion, diced
5 tablespoons ketchup




Place the beans in the cooker. Add the oil, salt and water to cover the beans by 1 inch.
Soak overnight or for about 8 hours.
Brown bacon and drain.
Add the bacon, beans and the remaining ingredients. Add more water to cover all the ingredients by 1 inch. Stir gently.
Close the cover and place the regulator on vent pipe. Cook for 45 minutes with the pressure regulator rocking slowly.
Remove from the heat and let the pressure drop of its own accord.
