3/4 cup shortening
1 cup sugar
1 egg
1/4 cup molasses
2 cup flour
1 Tablespoon ginger
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoon baking soda




Cream shortening and sugar. Beat in egg. Stir in molasses. Add dry ingredients, mix well. Refrigerate dough at least 1 hour. Form 1 inch balls, roll in sugar. Place on ungreased cookie sheet 1 inch apart. Bake at 350 degrees 10 to 12 minutes. Cook on rack.
I make the balls a little bigger than one inch and cook for about the same time. I like them chewy, not crispy, so they’re a bit underbaked. YUM!
