Herb Garlic Roasted Potatoes
I usually make this when I do a pot roast and everyone enjoys the potatoes this way.

4 Lg russet potatoes, washed and scrubbed
1 envelope onion soup mix
2 cloves garlic, sliced
1/2 cup melted butter or margarine
1 teaspoon Pepper

Preheat oven to 425 degrees for 10 minutes. Leave skins on potatoes and cut in half lengthwise and then cut into quarters. Spray a large cast iron skillet with pam and arrange potatoes in the pan. Drizzle butter or margarine over all potatoes to coat. Sprinkle onion soup mix over potaoes, now add the garlic and pepper. Cover skillet with foil and bake for 1 hour at 425. At the last 10 minutes, turn oven to broil and take off foil from pan and put under the broiler. Keep watch so they don`t burn. They will be nice and brown and crunchy.
