Zippy Corn Chowder Tweeked
This chowder is so yummy I love it. I got the original recipe from a magazine but I have changed it so much...it has become my own.

2 med onions
1-2 med green pepper, chopped
2 Tbsp margarine
4 cups vegetable broth
6 potatoes, (cubed)
1/3 cup jalapeño pepper
2 Tbsp Dijon mustard
salt
Pepper
1 tsp paprika
red pepper flakes, from 2 peppers (1 Tbsp)
1/2 cup flour
1 cup whipping cream, or cream
2 cups 2% lowfat milk, (or as much as it takes to make it hte right consistancy for you. DIVIDED




In a large saucepan, saute onion, peppers and butter until tender. Add broth& potatoes and bring to boil. Reduce and cover and simmer for 15 min. Add corn, jalapeno, mustard, salt, pepper, paprika & red pepper flakes. Bring to boil. Combine flour and 1/2 cup milk to make smooth. Add to pan and add rest of cream and milk and stir to mix. Bring to boil. Reduce heat and cook covered about 20 min. or until thick and bubbly. Enjoy
