MUSHROOM CHICKEN PACKETS
PASTRY WRAPPED CHICKEN AND A SAVORY ONION-MUSHROOM MIXTURE TURN THIS SIMPLE DISH INTO SOMETHING SPECIAL THAT WOULD MAKE ANY HOSTESS PROUD....THEY ARE GOOD.

4 Tbsp butter or margarine
4 boneless skinless chicken breast halves, (1lb)
1 1/4 cup chopped fresh mushrooms
1/2 cup chopped onion
1 package (17 1/4oz) frozen puff pastry, thawed
Fresh vegetables, lightly steamed (optional)




In skillet, melt 2 tbsp butter. Add chicken. Cook over med. heat for 6-8 min. on each side or until chicken juices run clear. Remove to a bowl and cool. In the same skillet, saute mushrooms and onion in remaining butter until tender. Divide pastry into four portions. On a floured surface, roll out one portion into 8-in circle. lace one chicken breast on 1/2 of circle near edge. Spoon one-fourth the onion mix over chicken Fold pastry over chicken. Moisten edges w/water and seal. Cut slits in top. Repeat w/ remaining pastry, chicken and filling. Arrange packets in a single later in an ungreased 15X10 baking pan. Bake uncovered, at 425 for 15-20 min or until golden brown. Serve w/veggies if desired.
