Filling:
1 1/4 lbs ground beef, browned (drained)
1/2 tsp chili powder
1/2 tsp ground cumin
1/4 tsp salt
1 jar (16 oz) thick & chucky med. salsa
1/4 cup green or red bell pepper, chopped
corn bread
1 1/2 cups all-purpose flour
1 cup yellow corn meal
1/4 1/3 cup sugar
1 Tbsp baking powder
1 1/4 cups milk
2 eggs
1/4 cups Vegetable Oil
4 oz sharp cheddar cheese, shredded (1cup)
sour cream
Extra salsa




Preheat oven to 375. Generously spray a bunt pan with nonstick cooking spray. For filling, brown beef. Sprinkle with seasonings. Stir in salsa. Cook over medium-low heat 5 min. Meanwhile, chop pepper, sprinkle on bottom of pan.
For corn bread, combine flour, cornmeal, sugar, baking powder & salt. Add milk, eggs and oil; stir just until dry ingredients are moistened. Stir in cheese.
Spread 1 1/2 cups batter evenly over peppers in pan. Top with filling and then remaining batter, spreading evenly.
Bake 35-40 min or until top is lightly browned. Loosen corn bread from edge and center of pan with knife. Invert onto serving plate. Slice into wedges and serve with sour cream and salsa.
