Wilted Spinach Salad
This is a great salad as an accompaniment to grilled meat or as a light meal alone. It provides lots of veggies, and you can substitute fat free italian dressing to make it even healthier. Buy the mushrooms already sliced to save time.

1 1/2 pounds spinach, with stems trimmed
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
1 cup cherry tomatoes, or grape tomatoes - sliced
1 pound mushrooms, sliced
1/2 cup Italian salad dressing
3 green onions
4 strips bacon, cooked and crumbled
croutons, to taste

In a large salad bowl, combine the spinach, bell pepper, and tomatoes.

Saute the mushrooms and green onions in the Italian Dressing over medium-high heat, stirring occasionally until the mushrooms are soft - about 5 minutes. Pour over the spinach and toss gently until evenly coated. Tope with bacon and croutons. Serve hot.
