Pepper And Coriander-Coated Salmon Fillets

3 T. Italian parsley
3 T. orange peel
1/4 cup coriander seeds, crushed
1 T. brown sugar
2 tsp black pepper
6 salmon fillets
1 T. canola oil

Mix parsley and orange peel in small bowl. Mix coriander, brown sugar and black pepper in medium bowl. Chill. Sprinkle salmon with salt. Coat on all sides with spice mixture. Melt 1/2 Tbsp. butter and 1/2 Tbsp. oil in large skillet over medium high heat. Add 3 salmon fillets and cook fish until crust is golden and center is opaque, about 4 minutes per side. Transfer fish to platter and tent with foil. Wipe skillet and repeat with remaining salmon. Spoon parsley mixutre atop salmon and serve.
