Buttermilk Cookies with Caramel Frosting

Cake:
2 c. brown sugar
1 c. (2 sticks) butter, melted
1 tsp. vanilla extract
2 eggs
4 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 c. buttermilk
Frosting:
1 c. packed brown sugar
1/4 c. butter
1/4 c. evaporated milk
1 1/3 c. sifted powdered sugar




Cake:
Mix sugar and butter; add vanilla and eggs. Beat until creamy. Add flour, baking soda and baking powder alternately with buttermilk. Mix well (with electric mixer) and store in refrigerator overnight. Drop by tsp. onto cookie sheet and bake at 350 degrees for 8 - 10 minutes. Frost with Caramel Frosting.

Caramel Frosting:
Heat and stir brown sugar, butter and evap. milk over medium heat until mixture comes to a full boil. Boil 1 minute, stirring constantly. Remove from heat. Add 1 1/3 cups sifted powdered sugar. Beat with a wire whisk until smooth. Frosting will thicken as it cools. If necessary add a few drops of water. Makes about 1 1/4 cups. (I usually make 1 1/2 batches of frosting, because I like lots of frosting.) :)
