Banana Muffins
A great breakfast muffin. Also a good way to use that last bannana that is getting a little to ripe. We like to add chocolate chips for an added flavor. Half or all of the oil can be replaced with applesause for a lower calorie muffin.

2 cups flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1/4 tsp. nutmeg, or cinnamon
1/2 cup banana, mashed (or 1 medium mashed Bannana)
1/2 cup milk
1/3 cup oil
1 egg, slightly beaten




Grease 12 muffin cups or line with paper liners. In medium bowl combine dry ingredients. Stir in remaining ingredients just until dry ingredients are moistened. Spoon into cups. Bake in preheated 375F degree oven for 15 to 20 min.
(To make a low fat or non fat muffin substitute 1/2 or 1 cup applesauce for 1/2 or all of the oil.)
