Lemon Mousse Torte
This lovely light dessert is wonderful anytime of the year.

1 pkg. golden yellow layer cake mix or 1 egg or 1/2 cup cold water or 1 box instant lemon pudding mix or 1 cup cold milk or 1 container frozen whipped topping, thawed, divided or Lemon slices and mint sprig, for garnish, optional




1. Preheat oven to 350º F. Spray a 9-inch round cake pan with nonstick cooking spray; set pan aside. In a Thatsa™ Bowl Jr., prepare cake mix as package directs, using egg and water. Pour cake batter into prepared pan. Bake in preheated oven 20-25 minutes until cake springs back when lightly touched in center. Cool cake in pan on wire rack 10 minutes, then remove from pan to rack to cool completely.

2. For mousse filling, in a Thatsa™ Bowl Jr., combine pudding mix and milk. Beat with electric mixer at low speed until combined, then beat at high speed 2-3 minutes until mixture is thick. Fold in half the whipped topping.

3. When cake is cool, using a long, sharp knife, cut cake horizontally in half to make 2 layers.

4. On a serving plate, place one cake layer, cut-side up. Spread layer with half the mousse filling. Place second cake layer, cut-side down over mousse. Spread remaining mousse over top of cake. Frost sides with remaining whipped topping. Garnish, if desired, with lemon slices and mint sprig.
