6 prepared single-serving graham cracker crust
1 package vanilla pudding and pie filling mix
1/3 cup water
1 can NESTLÉ ® Carnation ® Evaporated Lowfat Milk
1 tablespoon Lemon juice
2 teaspoon lemon peel, grated
1 pint strawberries*
1/4 cup mint leaves

COMBINE pudding mix and water in small saucepan. Add evaporated milk, lemon juice and lemon peel; stir until smooth. Cook over medium-low heat, stirring constantly, until mixture comes to a boil and thickens.

POUR into crusts; refrigerate for 1 hour or until set. Top with fruit and mint leaves before serving.

*About 3 peeled, sliced kiwifruit or 2 oranges (sectioned) could be used in place of the strawberries or one could dress the tarts with any desired combination of these fruits.
