Vegetarian Gravy
This is a gratifying gravy sure to please the most discerning vegetarian.

1 teaspoon virgin olive oil or 2 medium onions, minced or 4 cups mushrooms, minced or 1/2 teaspoons seasalt or 6 Tablespoons whole wheat pastry flour or 1 cup red wine or 1 Tablespoon soy sauce, low-sodium or 1 Tablespoon miso paste, paste or 2 cups vegetable stock

Heat a skillet over medium heat and add oil. Add onions, mushrooms, and salt. Stir until onions are soft and golden. Add flour and heat 2 minutes, stirring occasionally. Add red wine and soy sauce. Dissolve miso in stock. Add to above and heat until mixture thickens. In a blender, puree mixture until smooth.

Serve immediately, or store in the refrigerator or freezer. Add extra stock if the gravy becomes too thick.
