Quick Blender Latkes
Chanukah would not be Chanukah without freshly made latkes -- and these not only are delicious but oh-so-easy!

6 all purpose potatoes, peeled and thinly sliced
3 large eggs
1 medium onion, thinly sliced
6 tablespoons olive oil
2 tablespoons matzo meal
Salt and freshly ground pepper
2 cups natural unsweetened applesauce




Put 2 sliced potatoes, 1 egg, and about a third of the onion in the container of a blender or food processor. Blend until smooth. Pour into a bowl. Repeat twice with the remaining ingredients.

Add 2 tablespoons of olive oil to the batter. Stir in the matzah meal and season to taste with salt and pepper.

Heat the remaining 1/4 cup of olive oil in a large cast-iron frying pan over medium-high to high heat. When the oil is hot but not smoking, ladle about 1/4 cup of batter into the pan. Cook for 3 minutes, turn and cook for an additional three minutes or so, or until lightly brown. Drain the latkes on paper towels.

Cook only a few latkes at a time; do not crowd the pan. Let the oil return to its full heat between batches.

Serve with applesauce.
