2 cups brown sugar
3/4 cup whole milk
1 pinch salt
1 tablespoon butter
1/2 teaspoon vanilla extract




Place all the ingredients, except the vanilla, in a heavy saucepan. Stir and cook till the temperature reaches 238 degrees F (use a candy thermometer). Remove from the heat and set the saucepan in ice cold water until the temperature of the mixture goes down to about 140 degrees F. Add 1/2 teaspoon vanilla extrace and beat this into the fudge until mixture is creamy. Pour into a square buttered pan. When the fudge is slightly set, mark it into squares and let it stand until cold!

Note: You may add chopped nuts, shredded coconut,or two tablespoons of peanut butter to the fudge when you add the vanilla.
