Pace® Tortas de Pollo con Salsa
What a great way to use leftover chicken! These chicken patties are enlivened with Pace® Chunky Salsa, subtly flavored with cilantro, and then served over greens and topped with more salsa. An easy, fresh-tasting meal.

1 package (8 ounces) cream cheese, softened
4 ounces goat cheese, softened
1/2 cup pepper jack cheese, shredded, and cheddar cheese blend
1 cup cooked Tyson® Chicken, chopped
1 1/2 cups Pace® Chunky Salsa
1/2 cup Italian-seasoned bread crumbs
1/2 teaspoon dried cilantro, or 2 teaspoons fresh cilantro
1/2 teaspoon ground pepper
3 tablespoons olive oil
3 cups mixed greens




MIX cheeses, chicken and 1/2 cup salsa. Refrigerate for 15 min.

MIX bread crumbs, cilantro and pepper.

SHAPE salsa mixture into 18 patties. Coat with crumb mixture. Refrigerate at least 30 min.

HEAT 2 tbsp. oil in large skillet. Add patties and cook for 1 min. or until lightly browned, turning once.

ARRANGE greens on six plates. Top each with 3 tortas de pollo. Spoon remaining salsa over all. Serves 6.
