Sunny Artichokes

3 large fresh artichokes
1 lemon, sliced
2/3 cup water
1/2 cup sundried tomatoes, chopped
1/2 cup seasoned bread crumbs
1/4 cup golden raisins, coarsely chopped
salt and pepper, to taste
3 tablespoons olive oil

1. Cut off and discard stems of artichokes at base so that artichoke will sit upright in casserole for cooking. Using scissors, trim and discard thorny portion of leaves. In OvenWorks™ 3-quart Oval Casserole, place artichokes, the lemon slices and water. Cover and cook in microwave on High 10-14 minutes, until artichokes are tender when pierced with fork near base.
2. Meanwhile, in small bowl, stir together breadcrumbs, sun-dried tomatoes and raisins. Season to taste with salt and pepper.
3. Remove artichokes from casserole. Discard lemon slices and water. Spread leaves of each artichoke and stuff with the breadcrumb mixture. Drizzle each with l Tbs. olive oil. Return artichokes to casserole; cover. Cook on High 3-5 minutes until artichokes are heated through and tender. Let stand, covered 5 minutes before serving.
4. To serve, cut each artichoke lengthwise in half.
