Intensely Chocolate Pudding

1 cup sugar
1/3 cup cornstarch
Dash salt
4 large egg yolks, lightly beaten
3 1/2 cups whole milk
6 ounces bittersweet chocolate, finely chopped
2 ounces unsweetened chocolate, finely chopped
2 teaspoons vanilla extract

In a large, heavy saucepan, stir together the sugar, cornstarch, and salt.

Gradually whisk in the egg yolks, one at time, until combined. An easy way to do this is to put each yolk in a small cup and slide it into the pan from the cup.

Slowly whisk in the milk and keep whisking until smooth.

Cook over medium-high heat, stirring constantly with a whisk for 15 to 20 minutes, or until thickened. Remove the pan from heat and whisk in chocolate and vanilla, whisking until smooth.

Immediately, pour the pudding through a wire-mesh strainer into a bowl or individual custard cups. Cover surface of pudding with a piece of plastic wrap to prevent a skin from forming. Let the pudding cool slighlty and then refrigerate for at least 2 hours or until ready to eat.
