1 quart milk
1 dozen eggs
1/2 teaspoon salt
1 to 2 teaspoons sugar, (to taste)
1 teaspoon vanilla extract
3 pieces clean cheese-cloth
cotton kitchen string, to tie cheese-cloth with

Beat eggs together and set aside. In a large pan, heat milk to a rolling boil, stirring constantly. Once boiling, slowly add eggs, salt, sugar, and vanilla. Continue to cook on lower heat, stirring occasionally, until curds have formed. Remove from heat and cool slightly. Line a colander with 3 thicknesses of cheese-cloth. Place colander in the sink and pour in curd, allowing water to drain away. Gather cloth together, form into a ball and tightly squeeze. Tie top of cloth with a long string. Hang in a convenient place with a bowl underneath to catch excess liquid. Occasionally squeeze and tighten string. Once liquid no longer drains off, remove from cheese-cloth, cover with plastic wrap and refrigerate.
