Grilled Lime-Cilantro Chuck Steaks
The marinade contains a wonderful blend of spices. These steaks are perfect for family cookout!

1 1/4 pound 1-inch-thick boneless beef chuck eye steaks, well-trimmed
3 tablespoons fresh lime juice
3 tablespoons water
1 tablespoon chopped fresh cilantro
1 small jalapeño pepper, chopped
1 large clove garlic, crushed
1/4 teaspoon ground cumin




In a glass or ceramic bowl, mix together the lime juice, water, cilantro, jalapeno, garlic, and cumin. Put the steaks in a large, sealable plastic bag and pour the marinade over them. Seal well and refrigerate for at least 1 hour and up to 12 hours, turning occasionally.

Prepare a charcoal or gas grill. The coals should be medium hot.

Remove the steaks from the marinade; discard marinade.

Put the steaks on grill over medium, ash-covered coals. Grill, uncovered, for 16 to 20 minutes for medium-rare to medium doneness, turning occasionally.

Carve steaks into thin slices; season with salt and pepper as desired.
